How to Store Sweet Corn

Sweet corn is at its best right after harvest because sugars change quickly after picking. Cold storage slows the loss of sweetness but does not stop it entirely.

Best storage conditions

Store sweet corn at about 32 F. High humidity, around 90 to 95 percent, helps keep husks fresh and kernels from drying. Refrigeration is recommended immediately, preferably with husks left on. Do not store sweet corn at room temperature any longer than necessary.

How long it keeps

Sweet corn usually keeps only about 5 to 7 days, and best eating quality is often within the first 1 to 3 days. The longer it sits, the less sweet and tender it becomes.

Storage methods

Place ears in the refrigerator as soon as possible after harvest, ideally near the coldest section without freezing. Keep husks on for short storage to reduce drying. Root cellar and pantry storage are not useful for sweet corn. No curing is involved.

Freezing & preserving

Sweet corn freezes very well after blanching and can also be pressure canned or dried in some forms. Use USDA or NCHFP recommendations for processing times and pack styles.

Tips

Harvest early in the day for best quality if you can cool it right away. Use damaged or worm affected ears promptly rather than trying to store them.
