How to Store Kale

Kale stores better than many tender greens, but it still keeps best when very cold and moist. Prompt cooling helps preserve crisp texture.

Best storage conditions

Store at 32 to 36 F with high humidity, around 95 percent or higher. Keep it in the dark in the refrigerator.

How long it keeps

About 1 to 2 weeks is common, sometimes a bit longer for mature leaves in excellent condition.

Storage methods

Leave leaves dry and unwashed until use, or wash and dry them thoroughly first. Store in a perforated plastic bag or a container with a towel to manage moisture. Do not pack it tightly or let it sit wet.

Freezing & preserving

Freeze after washing and blanching. Kale also dries well for flakes or chips. For canning, use tested USDA or NCHFP recipes, and as a low-acid vegetable it requires pressure canning.

Tips

Remove yellowing leaves as they appear. Keep away from ethylene-producing fruit to reduce yellowing.
