How to Store Green Beans

Green beans are a short term crop that needs cool storage and high humidity. They are best when used soon after harvest while pods are crisp and bright.

Best storage conditions

Store green beans at about 40 to 45 F. Relative humidity should stay high, about 90 to 95 percent. Refrigeration is recommended for home storage, ideally in a perforated bag or crisper drawer. Do not hold beans at room temperature for long.

How long it keeps

Fresh green beans generally keep about 7 to 10 days under good refrigerator conditions. Older, overmature, or wet beans deteriorate much faster.

Storage methods

Cool beans promptly after harvest and refrigerate them unwashed if possible. Use ventilated bags or containers so moisture does not build up excessively. Root cellar and pantry storage are poor choices. No curing is needed for fresh snap beans.

Freezing & preserving

Green beans freeze well after blanching and can also be pressure canned or dried for soup use. For canning, use only tested USDA or NCHFP directions because snap beans are a low acid vegetable.

Tips

Pick beans while pods are young and tender for the best storage and eating quality. Avoid snapping or crushing pods during harvest and handling.
