When & How to Harvest Green Beans

Snap beans are harvested while pods are tender and before seeds inside enlarge much. Frequent picking keeps plants productive and improves pod quality.

How to tell it is ready

Pods are ready when they reach normal length for the variety, feel firm and crisp, and snap cleanly when bent. The surface should be smooth or slightly rounded, not lumpy from large seeds inside. Color should be bright green, yellow, purple, or mottled as expected for the variety. Overmature pods become tough, stringy, or swollen.

How to harvest

Hold the stem with one hand and pick the pod with the other to avoid pulling off blossoms or breaking branches. Harvest gently and often, especially on pole beans. Use both hands on delicate plants because stems can snap easily. Do not leave mature pods on the plant if you want continued production.

Timing

Bush beans often begin harvest 50 to 60 days from sowing, while pole beans may take 60 to 75 days. Pick in the morning after plants are dry for best crispness. Harvest every couple of days during peak production.

After the harvest

Keep beans cool and shaded after harvest. Refrigerate soon to maintain tenderness and color. Avoid washing until use if you want to minimize surface moisture during storage.

Tips

Regular harvest is the best way to extend the picking season. Do not wait for pods to fill out like shell beans unless that is your goal. Picking when plants are wet can spread disease, so let foliage dry first.
