How to Store Cabbage

Cabbage is a dependable cool season storage crop, especially dense late types. It stores best when kept near freezing with high humidity.

Best storage conditions

Store cabbage at about 32 F. Relative humidity should be high, around 90 to 95 percent, to prevent wilting. Refrigeration is recommended for short term home storage, and a root cellar works well for longer holding. Do not keep it in a warm, dry pantry.

How long it keeps

Depending on variety and conditions, cabbage may keep 1 to 3 months, and sometimes longer in excellent storage. In a refrigerator, whole heads usually last several weeks.

Storage methods

Store whole heads unwashed with a few wrapper leaves left in place for protection. Refrigerators and cold cellars both work if humidity stays high. Cabbage does not need curing. Provide ventilation, and keep it separate from odor sensitive foods because brassicas can give off a strong smell during storage.

Freezing & preserving

Cabbage can be frozen for cooked dishes, dried in limited uses, or fermented and canned in tested products. For any canning or fermentation directions intended for shelf stable storage, use USDA or NCHFP guidance.

Tips

Choose firm, solid heads free from insect injury and splits. Remove any yellowing or decaying outer leaves as needed during storage.
