How to Store Beets
Beets are a reliable storage root when kept cold and moist. The main goals are preventing moisture loss and removing the leafy tops promptly.

Best storage conditions
Store beets at 32 to 36 F. High humidity, about 90 to 95 percent, is ideal. Refrigeration is recommended for home storage, especially in a crisper drawer or perforated bag. Remove greens, leaving a short stem stub, before storage.
How long it keeps
Good quality beets may last 2 to 6 months in excellent cold storage. In a household refrigerator, several weeks to a few months is common.
Storage methods
Store unwashed roots in perforated plastic bags or bins in the refrigerator. A root cellar with damp packing material also works well for longer holding. Beets do not need curing. Keep them from drying out, but do not let free water collect on the roots.
Freezing & preserving
Beets can be frozen after cooking, pickled, pressure canned, or dried in slices. Follow USDA or NCHFP directions for canning because processing differs between plain beets and pickled beets.
Tips
Use only sound roots without deep cuts or insect injury for storage. If greens are fresh, separate and use them quickly because they do not keep nearly as long as the roots.
