When & How to Harvest Celery
Celery quality depends on harvesting before stalks become coarse or pithy. You can either take whole plants or cut outer stalks over time.

How to tell it is ready
Harvest when stalks are crisp, full-sized, and thick enough for the variety, usually when the plant forms a solid bunch. Stalks should feel firm and juicy, not hollow or overly stringy.
How to harvest
For a full harvest, cut the whole plant at soil level with a knife. For a longer picking period, remove outer stalks individually near the base and leave the center to keep growing. Outer-stalk harvest works as a cut-and-come-again method for a while.
Timing
Celery commonly matures in about 80 to 120 days, depending on variety and growing conditions. Harvest in the morning when stalks are cool and crisp. Make repeated pickings if taking outer stalks.
After the harvest
Cool celery quickly and keep it moist but not wet in storage. Trim roots and damaged outer leaves, and refrigerate promptly. Wash before use rather than before storage when possible.
Tips
Harvest outer stalks first if you want a longer season from each plant. Do not let plants stand too long once they reach good size.
