Murasaki is a Japanese-style sweet potato with reddish-purple skin and white to cream flesh. It is drier, firmer, and less sweet than orange varieties, with a nutty, chestnut-like flavor that many find rich when baked. It grows on vigorous vines and typically wants a longer, warmer season.
Growing Murasaki Sweet Potato
Give it a long warm season of about 110 to 120 days and full sun, planting slips 12 to 18 inches apart once soil is thoroughly warm. In cooler regions use black plastic or row covers early to bank heat and lengthen the effective season. Dig before frost and cure warm and humid, since the dry flesh benefits from proper curing before storage.
