About Russet Burbank
Russet Burbank is the classic long, rough-skinned russet behind most commercial baking potatoes and french fries, with dry, fluffy white flesh once cooked. It is a late-maturing variety that needs a long growing season to reach full size, and it can produce oddly shaped or knobby tubers when stressed by heat or uneven moisture. Its high starch content makes it excellent for baking and frying but less ideal for boiling.
Growing Russet Burbank Potato
Because it matures late, plant early and give it a full, long season with steady, even watering to reduce knobby growth and hollow heart. Space seed pieces about 12 inches apart, hill deeply, and avoid letting the soil swing between very dry and very wet. Harvest after the vines have fully died back, then cure the tubers so the thick skins set for good long-term storage.
