Their dense, low-starch texture keeps them intact when roasted, boiled, or pan-fried, and the slender tubers are prized for their nutty, buttery flavor. Plants tend to set many small tubers per hill.

Growing Fingerling Potato

Space seed pieces about 10 to 12 inches apart and hill well, since fingerlings produce numerous slender tubers close to the plant that need soil cover to avoid greening. Most fingerlings are mid to late season and reward a long, even growing season with consistent moisture. Harvest after the vines die back, handling the delicate tubers gently, and note that their thin skins store best after a proper curing period.
