How to Store Oregano
Oregano is fairly easy to hold fresh for a few days, but it is usually best preserved by drying or freezing. Tender stems can mold if stored too wet.

Best storage conditions
Store fresh oregano at 32 to 40 F with high humidity, about 90 to 95 percent, out of light. Store dried oregano airtight in a cool, dry, dark cupboard.
How long it keeps
Fresh oregano usually keeps 5 to 10 days. Dried oregano keeps best quality for about 6 to 12 months.
Storage methods
Refrigerate sprigs in a perforated bag or wrapped loosely in a slightly damp towel. Do not pack tightly or leave leaves wet after washing. For fresh use, strip leaves as needed from the stems.
Freezing & preserving
Oregano freezes well whole, chopped, or in herb cubes. It also dries readily, but give it good airflow so leaves do not mold. Use tested USDA or NCHFP recipes for canned sauces or herb mixtures.
Tips
Use older stems first, since leaf drop increases with age. Keep away from ethylene-producing fruit if possible.
