When & How to Harvest Oregano
Oregano is most useful when harvested before flowering, while the stems are leafy and tender. Cutting at the right time also encourages fresh regrowth.

How to tell it is ready
Pick when stems are 4 to 6 inches long or more and carry plenty of healthy leaves. The best quality usually comes just before flower buds open, when growth is still soft and full.
How to harvest
Cut stems with scissors or pruners just above a leaf pair or side shoot. Leave several inches of growth on the plant so it can branch back and keep producing.
Timing
Oregano can be harvested repeatedly through the growing season. Pick in the morning after dew dries, and use cut-and-come-again harvesting with several rounds of trimming. Growth is often strongest before and around early bloom.
After the harvest
Keep stems shaded after cutting. Rinse if necessary, dry thoroughly, and refrigerate for short-term use or hang in small bunches to dry. Strip leaves from thicker stems after drying if desired.
