How to Store Kohlrabi
Kohlrabi stores best when treated like a root crop, cold, moist, and unwashed. Small, firm bulbs keep much longer than oversized ones.

Best storage conditions
Store at 32 to 36 F with very high humidity, about 95 percent, in the dark. A refrigerator crisper or root cellar is ideal.
How long it keeps
Bulbs usually keep 4 to 8 weeks, sometimes up to 2 months if tops are removed and humidity stays high. Attached leaves keep only a few days.
Storage methods
Trim off the leafy tops before storage, but do not peel the bulbs. Keep bulbs in a perforated plastic bag or bin to hold moisture while allowing some airflow. Do not store at warm room temperature for long, or they turn woody and lose moisture.
Freezing & preserving
For longer storage, peel, cut, blanch, and freeze. It can also be pressure canned only with tested USDA or NCHFP recipes, because it is a low-acid vegetable.
Tips
Check often for soft spots and use damaged bulbs first. Store away from apples and other ethylene-producing fruit if you want the greens to last.
