When & How to Harvest Kohlrabi

Harvest timing matters with kohlrabi because the bulbs stay sweetest and most tender when picked young. Wait too long and the texture often turns woody, especially in warm weather.

How to tell it is ready

Pick when the swollen stem is about 2 to 3 inches across for most varieties, or up to about 4 inches for larger types bred to stay tender. The bulb should feel firm and smooth, and the skin should still look fresh, not cracked or rough.

How to harvest

Use a knife or pruners to cut the stem just below the bulb. Hold the bulb with one hand as you cut so you do not yank roots loose or disturb nearby plants.

Timing

Most kohlrabi is ready about 45 to 70 days from sowing, depending on variety and weather. Harvest in cool parts of the season, spring or fall, and pick in the morning if possible. Check often and make multiple passes as bulbs size up.

After the harvest

Trim off the leaves soon after harvest if you are not using them right away, since they pull moisture from the bulb. Brush off soil and refrigerate the bulb promptly. Wash just before use for best storage.

Tips

Do not let bulbs get oversized if you want the best texture. Sow small batches every couple of weeks for a longer harvest window.
