How to Store Cauliflower
Cauliflower stores best when kept very cold and moist, but not wet. Intact heads last longer than cut florets.

Best storage conditions
Store at 32 to 36 F with high humidity, around 95 percent. Keep it dark in the refrigerator or a very cold cellar.
How long it keeps
Whole heads usually keep about 1 to 3 weeks. Cut florets are best within 3 to 5 days.
Storage methods
Leave the wrapper leaves on if present, since they help protect the head. Store in a perforated bag to hold humidity while allowing airflow, and avoid trapping condensation. Do not wash until use.
Freezing & preserving
Freeze florets after blanching. Cauliflower can also be pickled. For canning, use only tested USDA or NCHFP recipes, and plain cauliflower is low-acid so pressure canning is required where applicable.
Tips
Check for dark spots and use affected heads first. Store away from apples and other ethylene-producing fruit.
