When & How to Harvest Cauliflower
Cauliflower quality depends on cutting the head while it is tight and compact. If you wait too long, the curds separate and the texture declines.

How to tell it is ready
Harvest when the head is full-sized for the variety, firm, and made of tight, closed curds. The surface should still look smooth rather than loose, fuzzy, or spreading apart.
How to harvest
Cut the head with a sharp knife, taking several wrapper leaves with it to protect the curd. Make a clean cut below the head and avoid bruising it during handling.
Timing
Cauliflower is usually ready about 50 to 85 days from transplanting, depending on season and variety. Harvest in the cool part of the day once heads are mature, and check often because quality can change fast. Most plants are cut once, though side shoots may form on some types.
After the harvest
Keep heads shaded and cool immediately after cutting. Do not wash until ready to use unless needed, and refrigerate for best quality. Leave the wrapper leaves on until storage or prep.
