How to Store Arugula

Arugula is one of the shortest-keeping garden greens, so harvest only what you can use soon. Cold, moist storage helps, but it is still a quick-use crop.

Best storage conditions

Store at 32 to 36 F with very high humidity, about 95 to 100 percent, out of light. Refrigerate in the crisper.

How long it keeps

Fresh arugula usually keeps 2 to 5 days, occasionally up to 1 week if very fresh and dry. Once limp or slimy, it is past its best.

Storage methods

Store unwashed leaves in a container or perforated bag lined with a dry paper towel to catch moisture. Handle gently and do not compress the leaves. Pantry storage is not suitable.

Freezing & preserving

Arugula is best used fresh. It can be frozen after chopping into sauces or pesto, but texture is poor after thawing. Home canning is not a typical method for arugula.

Tips

Replace any wet towel if condensation builds up. Use damaged leaves first, because they break down quickly.
