When & How to Harvest Zucchini
Zucchini tastes best and stays tender when picked young. If you wait too long, the skin and seeds get tougher and the plant slows down.

How to tell it is ready
Pick zucchini when fruits are glossy, firm, and about 6 to 8 inches long, though round types should be harvested at the size typical for the variety. The skin should scratch lightly with a fingernail, and oversized fruits often turn dull and seedy.
How to harvest
Use a knife or pruners to cut the stem about 1 inch above the fruit. Avoid yanking or twisting hard, which can snap brittle stems and damage the plant.
Timing
Most varieties are ready about 45 to 60 days from sowing. Harvest in the morning when fruits are cool and firm, and check plants every day or two because zucchini can size up fast. Make multiple passes through the planting.
After the harvest
Handle fruits gently to avoid skin scuffs. Do not wash until you are ready to use them, just brush off soil and cool promptly. Store in the refrigerator for short-term keeping.
Tips
Pick often to keep plants producing. Do not let fruits get oversized unless you are saving seed or want large stuffing squash.
