When & How to Harvest Spinach
Spinach turns from tender to coarse quickly, especially as weather warms. Timely harvest also helps you get more leaves before plants bolt.

How to tell it is ready
Harvest baby leaves when they are large enough to use, or wait for full-sized leaves that are crisp and deep green. Pick before leaves get thick, elongated, or bitter from heat. The center should still be producing fresh growth for repeat harvests.
How to harvest
Snip outer leaves at the base, or cut the whole plant about 1 inch above the crown if you want one larger harvest. Avoid damaging the growing point if you want regrowth. This works well as cut-and-come-again when taking outer leaves.
Timing
Spinach is often ready in 30 to 50 days, with baby leaves earlier. Harvest in the morning when leaves are cool and fully hydrated. Make repeated pickings from the outside of the plant as long as it stays vegetative.
After the harvest
Cool leaves right away and keep them dry for best storage. Rinse only if needed, then dry thoroughly before refrigerating. Store in a breathable container or bag.
Tips
Harvest promptly in warm spells to stay ahead of bolting. Thin crowded plants early and use the thinnings.
