How to Store Thyme
Thyme is a durable herb that stores better than most leafy herbs, but it still keeps best under refrigeration. Drying is one of the easiest ways to preserve it.

Best storage conditions
Store fresh thyme at 32 to 40 F with high humidity, around 90 to 95 percent, and low light. Store dried thyme airtight in a cool, dry, dark place.
How long it keeps
Fresh thyme usually keeps 1 to 2 weeks. Dried thyme keeps best quality for about 6 to 12 months.
Storage methods
Refrigerate sprigs loosely wrapped in a slightly damp towel or in a perforated bag. Avoid washing until use unless needed, then dry thoroughly. Do not trap wet sprigs in a sealed container.
Freezing & preserving
Thyme can be frozen on the stem or stripped from the stem. It also air-dries and dehydrates very well. Use tested USDA or NCHFP recipes for any canned herb products.
Tips
Strip and dry leaves if you notice condensation in the package. Keep only sound sprigs, because damaged ones darken first.
