When & How to Harvest Thyme

Thyme has the best texture and aroma when harvested before it gets too woody or starts heavy bloom. Regular cutting helps keep the plant compact and productive.

How to tell it is ready

Harvest once stems are several inches long and well leafed out. Tender tips and young side shoots are the best choice, while older lower stems are usually woodier and less useful.

How to harvest

Snip stems with scissors or pruners, cutting just above a pair of leaves or a branching point. Leave the woody base in place so the plant can keep growing.

Timing

Thyme can be picked repeatedly from late spring through the growing season. Morning harvest after dew dries is usually best. Use a cut-and-come-again approach, taking small amounts often.

After the harvest

Keep cut stems cool and out of direct sun. Rinse lightly if needed and dry well, then refrigerate or dry in small bunches. Remove tough lower stem portions before storing if desired.
