How to Store Summer Squash
Summer squash stores only a short time and keeps best when cooled soon after harvest. Use the most tender, blemish-free squash first.

Best storage conditions
Store at 41 to 50 F with high humidity, around 90 to 95 percent. Keep it out of direct light and avoid overly dry air.
How long it keeps
Usually 4 to 7 days, sometimes up to 2 weeks under good conditions.
Storage methods
Leave squash unwashed and dry until use. Refrigerate in a perforated plastic bag or other breathable container, and avoid airtight storage that traps moisture. Do not hold it at room temperature for long if you want good quality.
Freezing & preserving
Freeze in slices or grated form after blanching, or pickle it. Dehydrating works for chips or soup additions. For canning, use only tested USDA or NCHFP recipes, since plain canned summer squash is not generally recommended for home canning.
Tips
Sort out bruised squash right away. Keep away from apples, melons, and tomatoes that produce ethylene.
