When & How to Harvest Summer Squash
Summer squash is most tender and mild when harvested small to medium. Timely picking also keeps plants setting new fruit instead of putting energy into oversized squash.

How to tell it is ready
Harvest when fruits are shiny, firm, and the skin is still tender enough to mark with a fingernail. Typical pick size is about 4 to 7 inches for straight types and 2 to 4 inches across for pattypan, depending on the variety.
How to harvest
Cut fruits from the plant with pruners or a knife, leaving a short stem attached. Support the fruit with one hand and avoid bending or tearing the stem base.
Timing
Summer squash is usually ready about 45 to 60 days after planting. Pick in the morning and check every day or two during peak production. Harvest repeatedly as new fruits reach usable size.
After the harvest
Keep fruits shaded and cool after picking. Leave them unwashed until use, and refrigerate for best quality. Use promptly, since summer squash does not store for long.
Tips
Frequent harvest encourages more fruit set. Small fruits usually have the best texture and fewer developed seeds.
