How to Store Mustard Greens
Mustard greens are delicate and lose quality fast, so plan on cold storage and quick use. Keep them humid, but not wet.

Best storage conditions
Store at 32 to 36 F with 95 to 100 percent humidity in the dark. A refrigerator crisper works best.
How long it keeps
Fresh mustard greens usually keep 3 to 7 days. Baby leaves are often on the shorter end of that range.
Storage methods
Do not wash until use unless needed, then dry very well before refrigerating. Store in a perforated plastic bag or wrapped loosely with a slightly damp towel. Do not leave them at room temperature or sealed in a soggy bag.
Freezing & preserving
Blanch and freeze for longer storage. Drying is possible but is not the usual home method. If canning, use tested USDA or NCHFP pressure-canning recipes because mustard greens are low-acid.
Tips
Sort out bruised leaves right away. Keep away from apples and other ethylene-producing fruit.
