When & How to Harvest Mustard Greens
Mustard greens change quickly from mild and tender to strong and coarse as they age. Picking at the right stage keeps the leaves more usable and the plants producing longer.

How to tell it is ready
Harvest baby leaves when they are a few inches long, or wait for mature leaves about 6 to 10 inches long. Leaves should look fresh and crisp, with good color and no sign of bolting stalks if you want the best quality.
How to harvest
Snip individual outer leaves with scissors or a knife, or cut the whole plant just above the crown for a one-time harvest. For continued harvest, leave the center intact so new leaves keep growing.
Timing
Many mustard greens can be picked in about 30 to 50 days, with baby greens earlier. Harvest during cool weather and in the morning, and check every few days because growth can be fast. Make multiple passes for cut-and-come-again harvest.
After the harvest
Move harvested leaves out of the sun right away and chill them soon after picking. Wash, dry thoroughly, and refrigerate. Use promptly for best texture.
Tips
Harvest before hot weather pushes plants to bolt. Frequent picking helps keep leaves smaller and more tender.
