When & How to Harvest Swiss Chard
Swiss chard can produce for a long stretch if you harvest the right leaves at the right time. Picking regularly keeps stems tender and encourages fresh new growth.

How to tell it is ready
Harvest outer leaves once they are 6 to 10 inches long, or earlier for baby greens. Leaves should look full-sized, crisp, and richly colored, with stems that are still tender rather than oversized and stringy.
How to harvest
Twist or cut individual outer stalks at the base, close to the crown. Leave the center intact so the plant continues growing. Swiss chard is a strong cut-and-come-again crop.
Timing
Plants are often ready in about 50 to 60 days, with baby leaves sooner. Harvest in the morning and keep picking outer leaves through the season. Make repeated passes rather than removing everything at once.
After the harvest
Cool leaves quickly and keep them dry for storage. Wash if needed, then dry well and refrigerate. Separate damaged leaves so the rest keep better.
