When & How to Harvest Rutabaga

Rutabaga develops best flavor and texture when allowed to size up in cool weather, but not to the point of becoming overly coarse. Proper timing gives you dense, smooth roots that store well.

How to tell it is ready

Harvest when roots are firm and usually about 3 to 5 inches across, depending on the variety. The crown should be well colored and the root should feel heavy for its size, without major cracks or sponginess.

How to harvest

Loosen the soil around the root with a fork, then pull or lift it out carefully. Avoid striking or scraping the roots, since damaged roots do not keep as well.

Timing

Rutabaga generally takes about 80 to 100 days from sowing and is often harvested in fall after cool weather arrives. Pull roots before the ground freezes solid. Harvest in one or several passes as roots reach good size.

After the harvest

Trim off the tops to about 1 inch above the root and remove excess soil. Let roots dry briefly in shade, then store them cool and humid. Wash just before use.

Tips

Give plants enough spacing so roots size evenly. Cool-season harvest usually gives the best texture and storage quality.
