When & How to Harvest Rosemary

Rosemary is best harvested by taking tender new growth while still leaving enough structure for the plant to stay full. Timing matters because very old stems are woodier and less convenient to use.

How to tell it is ready

Pick sprigs once the plant is well established and has enough new growth to spare. Choose flexible, leafy stems, not thick woody branches, and avoid taking too much soft growth during extreme heat.

How to harvest

Use snips or pruners to cut sprigs just above a leaf node or side branch. Do not shear deep into old bare wood unless you know the plant regrows well from that point.

Timing

Rosemary can be harvested through much of the growing season in mild conditions. Pick in the morning after dew dries, and make light repeated harvests rather than one heavy cut. Growth is often strongest from spring through early fall.

After the harvest

Keep cut sprigs shaded and dry. Rinse only if needed, then dry thoroughly before refrigerating or hanging to dry. Strip lower leaves from stems if you plan to bundle them.

Tips

Take tip growth often to encourage branching. Avoid removing more than a modest share of the plant at one time.
