When & How to Harvest Radicchio

Radicchio is harvested as a firm head, so the key is waiting until the loose rosette of leaves closes into a dense, wrapped ball. Cool weather during the final weeks of growth produces the tightest heads and the best red color.

How to tell it is ready

A head is ready when it feels firm and solid to a gentle squeeze, similar to a small cabbage, and the interior has colored up red or reddish with pale ribs. Loose, soft heads are not finished, while heads that begin to split or send up a flower stalk are past prime.

How to harvest

Cut the whole head off at the base with a sharp, clean knife just above the soil line. Strip away any tough, damaged, or dirty outer wrapper leaves, keeping the tight inner head intact. Handle heads gently to avoid bruising the ribs.

Timing

Radicchio matures roughly 60 to 85 days after transplanting depending on variety, and it is best picked for a fall or cool-spring harvest rather than through summer heat. Harvest in the cool of the morning when heads are crisp and full of moisture, and expect to make several passes over a week or two as individual heads firm up at different rates. In many areas a light frost sweetens the flavor and deepens the color, so fall growers often wait until after the first cold nights.

After the harvest

Move cut heads out of the sun quickly and cool them promptly to preserve crispness. Leave heads unwashed for storage and rinse only right before use, then refrigerate in the crisper drawer at high humidity. There is no curing step for this leafy crop.

Tips

If a spring crop threatens to bolt, harvest promptly even at slightly smaller size rather than losing the head to a flower stalk. For a cut-and-come-again approach with some varieties, you can trim young leaves early, but let heads fully form before cutting them whole.
