When & How to Harvest Peas
Peas are sweetest and most tender when harvested at the right stage. Missing the window by a few days can mean starchy shell peas or tough pods.

How to tell it is ready
For snap peas, pick pods when they are plump but still glossy and crisp. For snow peas, harvest while pods are flat and seeds are only starting to show. For shelling peas, pick when pods are filled out but still bright green, before they fade or toughen.
How to harvest
Hold the vine with one hand and pick with the other to avoid pulling up or snapping the plant. Pods usually snap off easily, or you can use small scissors for clean picking.
Timing
Peas are a cool-season crop, often ready 55 to 70 days after sowing depending on type. Harvest in the morning when pods are crisp and cool. Make many passes, every day or two once production starts.
After the harvest
Cool peas quickly because sugars decline after harvest. Refrigerate promptly and keep pods dry until use. Wash just before eating or cooking.
Tips
Pick often to keep vines producing. Do not let pods get oversized unless you want mature shell peas.
