When & How to Harvest Fennel
Bulb fennel is best when harvested before the base gets too large, tough, or starts to split. Good timing keeps the bulb crisp and the flavor cleaner.

How to tell it is ready
Harvest when the swollen base is about 3 to 4 inches across and feels solid. The bulb should look layered and plump, with fresh green stalks and no obvious splitting.
How to harvest
Cut the plant at soil level with a sharp knife, or slice just below the bulb if you want the full base. Trim off the stalks after harvest, but you can save fronds for use if desired.
Timing
Most bulb fennel is ready in about 80 to 100 days, depending on variety and growing conditions. Harvest in the morning, especially during warm weather, and check often as bulbs size up. Usually this is a one-time harvest per plant.
After the harvest
Trim stalks to reduce moisture loss and cool bulbs promptly. Brush off soil, refrigerate, and wash just before use. Do not leave harvested bulbs in the sun.
Tips
Do not let bulbs sit too long once they reach usable size. Steady moisture helps bulbs size evenly and reduces splitting.
