When & How to Harvest Fava Beans

Fava beans are picked over several weeks as their pods fill from the bottom of the plant upward. Knowing the stage you want, tender young pods or fuller shelling beans, makes timing the harvest straightforward.

How to tell it is ready

For whole young pods, pick when they are 2 to 3 inches long and still soft. For shelling, wait until the pods are plump and glossy and you can feel the individual beans filling them out, but harvest before the pods turn dull, leathery, or lumpy, which signals the beans have gone starchy and tough.

How to harvest

Support the stem with one hand and snap or cut each pod off with a downward twist, or use garden snips to avoid tearing the brittle stalks. Work from the lower pods upward, since those closest to the ground ripen first.

Timing

Fava beans typically reach maturity about 75 to 90 days from sowing, with overwintered plantings finishing in spring. Pick in the cool of the morning when pods are crisp and full of moisture, and plan to make several passes over a week or two as the pods ripen in stages.

After the harvest

Move harvested pods out of the sun and into a cool spot promptly to keep them from wilting. Leave them unwashed and in the pod until you are ready to shell and cook, then rinse just before use.

Tips

Taste a few beans as you go to judge the sweet spot before they get starchy. If any pods dry out and harden on the plant, leave them to fully mature and save the seeds for drying or for next season's planting.
