Pattypan, also called scallop squash, is a summer squash shaped like a small flying saucer with distinctive scalloped, ruffled edges. It comes in white, pale green, and yellow forms, and offers a mild, slightly sweet flavor with a firm texture that holds its shape when cooked. Plants are typically compact and bushy, and both heirloom and hybrid types are widely available.
Growing Patty Pan Summer Squash
Space bush plants roughly 2 to 3 feet apart in full sun and warm soil. Harvest the fruit small, around 2 to 3 inches across, for the most tender flesh, because larger fruit turn tough and seedy. Pick often and watch for powdery mildew and squash bugs throughout the season.
