How to Store Sage
Sage is a sturdy herb that stores reasonably well fresh and also dries very well. Too much moisture during storage is the main problem.

Best storage conditions
Store fresh sage at 32 to 40 F with about 90 to 95 percent humidity and low light. Store dried sage airtight in a cool, dry, dark place.
How long it keeps
Fresh sage usually keeps 1 to 2 weeks. Dried sage keeps best quality for about 6 to 12 months.
Storage methods
Wrap sprigs loosely in a slightly damp towel or keep in a ventilated container in the refrigerator. Do not seal leaves wet in plastic. For drying, keep leaves in a single layer or small airy bundles.
Freezing & preserving
Sage can be frozen whole or chopped for cooked dishes. It is also a good candidate for air-drying or dehydrating. Use tested USDA or NCHFP recipes for any canned herb products.
Tips
Check for blackened leaves where moisture collects. Keep sage dry enough to prevent mold, but not so dry that it becomes brittle while still fresh.
