How to Store Green Onions
Green onions lose moisture fast, so think cold and humid, not room temperature. They are best used fresh within a week or so.

Best storage conditions
Store at 32 to 36 F with 95 to 100 percent humidity, out of light. Refrigeration is best.
How long it keeps
Fresh green onions usually keep 5 to 10 days. Tops often decline before the white shanks.
Storage methods
Keep them unwashed in a perforated plastic bag or stand them upright in a jar with a little water and refrigerate loosely covered. Change water if using the jar method. Do not store sealed while wet, and do not leave them on the counter for long.
Freezing & preserving
Slice and freeze for cooked dishes, or dehydrate for seasoning. Pickling is another option. Use tested USDA or NCHFP recipes for canning or pickling, because onions are low-acid unless properly acidified.
Tips
Trim off any slimy or yellow tips promptly. Green onions can absorb odors, so store them away from strong-smelling foods.
