How to Store Endive
Endive is a leafy green that stays freshest when kept cold and humid right after cutting. Handled well, a whole head holds much longer than loose salad leaves, which makes it a useful green to grow for a steady fall and early winter supply.

Best storage conditions
Store endive near 32 to 36 degrees Fahrenheit at high humidity, around 95 percent, which is the coldest, dampest part of most refrigerators. A crisper drawer or a loosely closed produce bag holds that moisture without trapping condensation against the leaves.
How long it keeps
Whole, unwashed heads typically keep for one to two weeks in the refrigerator, and firm escarole often holds toward the longer end. Loose or already washed leaves are best used within a few days.
Storage methods
Keep heads whole and unwashed until you are ready to use them, wrapping them loosely in a damp paper towel inside a perforated or partly open bag. Avoid sealing them airtight, which encourages slimy spots. For short holding, standing a trimmed head upright in a container with the base on a damp towel also works well.
Freezing & preserving
Endive can be blanched briefly in boiling water and then frozen for use in cooked dishes such as soups and braises, though the texture softens and it is no longer suited to salads. It does not can well on its own as a fresh green, and because leafy greens are low-acid, any canning must follow tested USDA or National Center for Home Food Preservation (NCHFP) pressure-canning directions for greens rather than a boiling-water bath. Drying is generally not recommended, since the leaves are high in water and lose quality.
Tips
Wash endive only just before you use it, since surface moisture shortens storage life. Trim away any browned or bruised outer leaves before storing, and keep it away from ripening fruits like apples that give off ethylene and can speed spoilage.
