How to Store Broccoli
Broccoli loses quality rapidly after harvest, so quick cooling is essential. It is best treated as a short term refrigerator crop rather than a long storage vegetable.

Best storage conditions
Store broccoli at about 32 F. High humidity, around 90 to 95 percent, is important to prevent yellowing and wilting. Refrigeration is recommended immediately after harvest. Do not keep broccoli at room temperature except for very short handling periods.
How long it keeps
Broccoli usually keeps about 1 to 2 weeks under very good cold storage. At warmer temperatures, quality declines within just a few days.
Storage methods
Refrigerate broccoli promptly in a crisper drawer or perforated bag. Keep it cold and slightly moist, but do not let water sit on the heads. Root cellar or pantry storage is not suitable. No curing is needed.
Freezing & preserving
Broccoli freezes well after blanching and is one of the better crops for freezer storage. It is not generally canned for top quality at home, and if you preserve it, follow tested USDA or NCHFP directions for the approved method.
Tips
Harvest while buds are tight and green, before yellow flowers appear. Use heads with any soft spots or opening florets first.
