How to Store Bok Choy
Bok choy is a tender brassica that needs cold, humid storage and fairly quick use. Mature heads last a little longer than baby bok choy.

Best storage conditions
Store at 32 to 36 F with 95 to 100 percent humidity and no light. Keep it in the refrigerator crisper.
How long it keeps
Bok choy usually keeps 3 to 7 days, sometimes up to 10 days for firm full-sized heads. Baby bok choy is more perishable.
Storage methods
Leave heads whole, unwashed, and loosely wrapped or bagged to hold humidity. Do not trim the base until you are ready to cook. Avoid warm kitchen storage and avoid sealing it wet.
Freezing & preserving
For longer storage, chop, blanch briefly, and freeze. Drying is possible for soup use. If canning mixed greens or plain greens, use tested USDA or NCHFP pressure-canning recipes because it is low-acid.
Tips
Watch the cut base and outer leaves for yellowing first. Keep away from apples, pears, and tomatoes.
