When & How to Harvest Tomatillos
Tomatillos are best picked when the fruit has filled its husk and reached full size. Harvesting at the right stage gives better texture and helps keep plants producing.

How to tell it is ready
Pick fruits when the papery husk is full and starting to split, and the fruit inside feels firm. Depending on the variety, the fruit is usually green, yellow, or purple at maturity, but the husk cue is often the most reliable.
How to harvest
Twist or clip fruits from the plant, taking care not to break branches loaded with more fruit. Gather any fully ripe fruits that drop naturally, as long as they are sound and clean.
Timing
Tomatillos are often ready about 70 to 100 days from transplanting, or later from seed. Harvest throughout summer into fall, making multiple passes every few days as husks fill and split. Pick when plants are dry if possible.
After the harvest
Leave the husks on until you are ready to use the fruit. Brush off debris and store in a cool place or refrigerate for longer keeping. Wash off the sticky coating just before use.
Tips
Check plants often once harvest starts, since fruits ripen steadily. Do not wait for fruits to soften too much on the plant.
