Rossa di Verona is a traditional round radicchio from the Verona region, producing compact heads of deep red leaves with bright white ribs. It is an heirloom Italian chicory known for cold hardiness and a robust bitter flavor that sweetens with frost. Heads tend to be slightly smaller and firmer than summer lettuces.
Growing Rossa di Verona Radicchio
Grow it as a fall and winter crop, sowing in mid to late summer and spacing around 10 inches apart. In milder regions it can overwinter for late harvests, and repeated cold sharpens both its color and flavor. Harvest firm heads before hard freezes, and peel away any weather-damaged outer leaves to reveal the tight red core.
