How to Store Tarragon

Fresh tarragon is delicate and does not keep long, so plan to use it within a few days or preserve it promptly. The tender leaves wilt and darken quickly at room temperature.

Best storage conditions

Store fresh sprigs in the refrigerator, ideally around 32 to 40 degrees F with high humidity near 90 to 95 percent. The crisper drawer is the best spot to hold that cool, moist air.

How long it keeps

Refrigerated properly, fresh tarragon usually stays good for about 4 to 7 days before the leaves begin to yellow or turn slimy. Frozen tarragon holds usable flavor for several months, while dried leaves keep for up to a year in an airtight jar.

Storage methods

Wrap fresh sprigs loosely in a slightly damp paper towel and slip them into a partially open bag or container in the refrigerator. Alternatively, stand the stems in a small jar with an inch of water, cover loosely with a bag, and refrigerate, changing the water every couple of days.

Freezing & preserving

Freezing keeps tarragon flavor far better than drying: chop the leaves and pack them into ice cube trays with a little water or olive oil, then freeze, or freeze whole sprigs flat in a bag. Drying is possible but flavor fades, so dry quickly in a dehydrator or warm airy spot and store airtight away from light. Tarragon is also classic infused into white wine vinegar. For any canning, follow only tested USDA or NCHFP recipes; herbs added to low-acid vegetables or meats require pressure canning, and homemade herb-in-oil mixtures are not safe at room temperature and must be refrigerated and used within a few days.

Tips

For the freshest flavor, freeze or infuse tarragon the same day you cut it. Label and date frozen cubes, and remember that dried tarragon loses much of its licorice character, so use a bit more of it than you would fresh.
