How to Store Lavender

Lavender is usually stored for drying rather than long fresh holding. Fresh stems are short-lived, but flower spikes keep very well once fully dried.

Best storage conditions

For fresh storage, keep at 32 to 40 F with moderate to high humidity and low light. For dried storage, keep airtight in a cool, dry, dark place.

How long it keeps

Fresh lavender usually keeps 3 to 7 days. Dried lavender keeps best quality for about 1 year.

Storage methods

For short fresh storage, refrigerate dry stems loosely wrapped. For drying, bundle small bunches or lay stems in a single layer with good airflow until fully dry. Do not store freshly cut stems in a sealed damp bag.

Freezing & preserving

Drying is the main preservation method. Lavender can also be frozen for culinary use, though texture softens after thawing. Use tested USDA or NCHFP recipes for jellies, syrups, or any canned products.

Tips

Harvest when buds are just opening for easiest drying. Make sure dried stems are fully dry before sealing, or trapped moisture can cause spoilage.
