How to Store Chives
Chives are tender and lose quality faster than woody herbs, so use them fresh within a few days or preserve them promptly. Refrigeration helps, but not for long.

Best storage conditions
Store fresh chives at 32 to 36 F with high humidity, about 95 percent, and low light. Dried or freeze-dried chives should be kept airtight in a cool, dry, dark place.
How long it keeps
Fresh chives usually keep 5 to 7 days. Frozen chives keep for several months, while dried chives keep best quality for about 6 to 12 months.
Storage methods
Wrap unwashed chives loosely in a barely damp paper towel and place in a perforated bag or container in the refrigerator. Avoid crushing the leaves and avoid storing them wet. Counter storage is only for same-day use.
Freezing & preserving
Chives freeze very well, chopped or whole, and that is usually better than drying for flavor retention. Drying is possible with good airflow or a dehydrator. Use tested USDA or NCHFP recipes for any canned herb products.
Tips
Trim away any slimy tips right away. Keep chives away from foods that absorb odors easily, since they are aromatic.
