When & How to Harvest Eggplant
Eggplant quality depends heavily on harvest stage. Fruits picked at the right time are glossy and tender, while overripe fruits turn dull, seedy, and spongy.
How to tell it is ready
Harvest when fruits have full color for the variety, smooth shiny skin, and slight give when gently pressed. Seeds should still be soft, and the fruit should not look dull or bronze.
How to harvest
Cut fruits with pruners or a knife, leaving a short stem and cap attached. Do not pull by hand, because stems are tough and can tear the plant.
Timing
Eggplant is commonly ready 65 to 85 days from transplanting, depending on variety and weather. Harvest in the morning or when temperatures are cooler, and make multiple passes as fruits size up. Check every few days during peak season.
After the harvest
Handle gently to prevent bruising and skin scuffs. Cool promptly and store in a cool room or refrigerator for short-term keeping. Wash just before use.
