What affects Pistachios prices
U.S. pistachio prices depend on California orchard production, quality and size distribution, processing yields, domestic use, and export demand. California produces nearly all U.S. pistachios, with smaller volumes from Arizona and New Mexico. The crop requires irrigation, and water availability, heat during nut development, winter chill, wind pollination, pests, and harvest conditions influence output and quality. Because pistachios are a durable tree nut, inventories, processing, packaging, freight, and overseas trade are important alongside the annual crop.
Pistachios are harvested mainly in late summer and early fall, when orchards are mechanically shaken and nuts move quickly to processing. The new crop is then dried, processed, and marketed through the following year. Refrigerated or otherwise controlled storage allows kernels and in-shell nuts to be sold well beyond harvest, so retail availability is not limited to the harvest window. Export shipments and carry-in inventories help determine how the annual harvest is distributed across seasons.
