What affects Figs prices
U.S. fig prices are driven by fresh and dried supply, fruit quality, demand from retail and food manufacturers, and labor-intensive harvesting and packing costs. California, particularly the Central Valley, accounts for virtually all commercial U.S. fig production. Heat, irrigation, spring frost, rain near ripening, and pest or disease pressure can affect fruit size, splitting, drying quality, and yields. Fresh figs are highly perishable and require rapid cooling and distribution, while dried figs can be stored and marketed much longer; imports also contribute to supply.
California fresh fig harvests generally begin in summer and extend into fall, with timing varying by variety and whether growers have an early breba crop. The main crop provides the largest domestic fresh volume from late summer into autumn. Fresh availability is limited outside that period because the fruit is delicate and short-lived, so imports can play a larger role. Dried figs are processed after harvest and sold from storage throughout the year, making their supply pattern less seasonal than fresh figs.
